A New List – it’s uncompromising!

A New List – it’s uncompromising!

What should a cocktail list look like? It’s a conundrum that I’ve puzzled with over the years. Financially-speaking there are any number of drinks that “should” go on the list: “the easy drinking vodka one”, “the cash generating cheap spirits one/two”, “a crowd pleaser or two” (think mojito, cosmo etc). Ultimately however we strive very hard here to ensure that everything about the place looks different to everyone else. So, the decor is odd. The food menus are very different to our competition. Our Christmas menu is exciting and not full of blade of beef, risottos and chocolate tarts.

Therefore, for a list to be “honest” it needs to be a reflection of the people that create it and produce it. This list reflects Martha’s (Bar Manager) and my own drinking tastes. It’s clean, quite challenging at times and uses high calibre ingredients. Some people will struggle to find “the fruity one that tastes like pop” but I’m done apologising for that. There are plenty of places to find that drink and for an independent bar to be truly independent it should be aiming to be different. That is our aim.
